Don't be intimidated by this off-looking cut. With a little preparation and attention to detail, this can be one of the tastiest, most tender cuts anywhere on the animal. The one step which makes this a little more challenging is that the tongue needs to be peeled from the outer covering, but this is easily accomplished once it is cooked and fork tender. It will peel right off very easily, leaving you with moist, deliciously flavored beef which would rival any other cut for flavor. Just order the "lengua" tacos at any great taco stand and you will understand.
