This beautiful cut (also known as Coulotte when portioned into steaks) encompasses the entire cap muscle of the top sirloin. It boasts a gorgeous, thick fat cap that covers the lean, triangular-shaped muscle resting beneath. This cut is very popular in Brazil and is typically served at Brazilian steakhouses. Cut it into thick strips and slow-roast over coals until that fat cap turns a delicious golden brown color as it slowly bastes the meat during the cooking process. Great for feeding multiple people or having some amazing roast beef leftovers! We recommend serving it medium-rare to medium.

All shipments will include a UPS tracking number so that customers can keep track of when their shipment will arrive, followed by a confirmation email once the package arrives on your doorstep.
If for any reason your shipment is delayed to the point where it arrives at unsafe temperatures, we will send you another shipment promptly.
We ship orders every Tuesday/Wednesday. If your order is placed by noon on Tuesday, it will ship the same week. If your order is placed after noon on Tuesday, your shipment will likely wait until the following week.
