This recipe is a one pan dish, easily thrown together in a matter of minutes. Sometimes you just need to get something hearty and delicious on the table without much fuss. Chopped beef steaks are made with ground beef, seasoned with salt and pepper, formed into thick medallions, and then wrapped with a piece of our natural bacon (no sugar/preservatives). It couldn't be easier. You basically put some diced veggies into a pan, place the chopped beef steaks on top, and roast in the oven until the meat is cooked. The veggies will soak up all that delicious bacon flavor. You can do this with one chopped beef steak or multiple. Just size up or down your pan accordingly.

4-5 cups chopped/sliced veggies of your choice (for this recipe I used butternut squash, red onion, and zucchini)
Herbs for seasoning (such as thyme and rosemary)
Salt for seasoning
Oil for seasoning
Step 1: Assemble the pan. Preheat the oven to 425 degrees. Cut the veggies into cubes. If you've got something that takes longer to cook, such as the butternut squash as compared to the zucchini, consider cutting the butternut squash in smaller cubes than the zucchini, that way everything cooks and finishes around the same time. Throw them into a pan or roasting tray, and season with olive oil, salt, and some chopped fresh herbs for flavor. Mix to combine seasoning. Place the bacon wrapped chopped beef steaks on top of the veggies with some space in between them.
Step 2: Roast in the oven. Put the pan or tray into the oven and let it do its thing. You can guesstimate around 20 minutes for a medium rare on the beef, or 25 minutes for more medium doneness. This will change based on how full the pan is, how cold the meat is going into the oven, etc, but these are good general guidelines. For exactness, use a meat thermometer and check for doneness after 20 minutes. 135 degrees for medium rare, and closer to 140 to 145 for medium or medium well. After done. remove the pan from the oven and allow everything to cool for at least a few minutes before serving, especially the meat. Test the veggies with a fork to make sure they are tender. If they need a few more minutes, remove the meat and give them a gentle stir, returning to the oven for a few more minutes until fork tender.
Step 3: Plate and serve. Give the veggies a gentle stir to make sure they have all that great bacon flavor. Serve the chopped beef steak over top the veggies and enjoy! This is a really quick, easy weeknight dinner that I often go to when I'm stretched thin for time. Plus it's just delicious. I like serving with mustard on the side.
